Corn Chowder

Ingredients:
2 Cups diced onion
1 Cup diced celery
2 Tbsp butter or oil
4-8 oz baco bits
2 Tbsp flour
1 large bell pepper; diced
2 Cups chicken stock
2 Large potatoes; diced
4 Cups frozen corn (thawed)
2-3 Tbsp sugar
Directions:
1. Sauté onions and celery for 5 minutes in oil. Add baco bits.
2. Add flour, peppers, chicken stock, and potatoes. Cook until tender (approx. 12 min).
3. Stir in thawed corn and sugar.
4. Use immersible blender to thicken. (Or use regular blender) a few seconds if you prefer chunky or longer if you like smooth and creamy.
Hint: If you find it too thick you can add water also (1-2 Cups)
5. Add parsley when serving.
